“I Smell An Imaginary Smell.”

I sometimes let my five-year-old daughter take a smell of my beers. I generally do this with beers that have a strong aroma. I like to see her thinking about the different things that she can pick up just from taking a whiff.

Recently, she took a sniff of RAR’s Naniticoke Nectar, a hazy IPA with bold citrus and nectar flavors. When she took a deep inhale her response was “I smell an imaginary smell.”

That sums up so much of what makes many beers great. We inhale deeply and savor IPAs with citrus and tropical notes, or piney dankness. We drink grassy farmhouse ales which harken to the earthiness of the barn and the smell of horse blankets. Russian imperial stouts can have vanilla, coffee, and toffee aromas.

These nuanced flavors are often achieved by carefully extracting them from raw ingredients that individually and before manipulation by the brewer do not appear. What we sense are molecular compounds that in their make-up smell and taste like other familiar foods and flavors (i.g. Beer brewed with Citra hops have flavors akin to grapefruit along with lemon and orange zest.) These analogous compounds are described when we talk about craft beer.

They are “imaginary smells.” We are sensing aromas and flavors of things that don’t actually exist within the beer. They often were not used in the brewing process and instead we use widely understood examples to describe what we sense. What a cool concept. It really does make the brewer’s work seem like alchemy.

This leads me to a terrible opinion:

I am already tired of these fruit infused IPAs.

I did not always feel this way. Just over year ago I was praising the return of Aprihop by Dogfish Head as one of my favorite beers and one of the few worthy of purchasing an entire case. I loved Aprihop and now… well… Dogfish replaced it with an even fruitier beer. It’s not bad. It’s not great either.

Full disclosure… I have a difficult relationship with most fruit beers. They are, in general, just not to my taste. Fruity beer leaves me conflicted at best and very unsatisfied at worst.

Mostly, fruit in an IPA is one of those “less is more” ideas. The less it is leveraged via the use of actual fruit the more likely I am to enjoy it. If there are fruit flavors to be had in a beer I believe the best way to achieve them via the proper use of grains, hops, yeast and other traditional ingredients. Bombing out a beer with fruits (or so help me an EXTRACT) is always fraught with danger. To do so with an IPA is even more suspect.

We are on the cusp of fruit IPAs taking over this summer. We are going to get orange and blood orange, grapefruit, apricot, peach, watermelonpineapple, pineapple, and pineapple IPAs out the ears this summer. They will be everywhere. Everyone is making them. It is going to be overwhelming.

I am already tired of it.

This is trend is hitting harder and faster than pumpkin beers during the third week of July.

When Grapefruit Sculpin first hit taps and later cans… I jumped in line to give it a try and I liked it. McGrath’s in downtown HBG got it on Nitro? I had to get down there. It was a great beer. Still is. It is just no longer novel and was simply existing as the crest of a giant wave.

The niche became a trend and soon, if not already, it is a fad run amuck.

I was interested and intrigued by the concept of a fruit infused IPAs when it was novel but now that they are downright ubiquitous they are uninteresting. Some taste like nothing but fruit juice mixed with a slightly hopped beer. Most seem to me more fruit than IPA. I think they are generally, overly sweet, lack subtly and are above all derivative.

The citrus, fruit or “tropical” and IPAs which use massive quantities of fruit to achieve their distinct flavor are going to burn hot and fast. I suspect it will pass through the industry in short order. Then on to the next trend.

Is this a sign of an “organic homogenization” of craft brewing? I hope not but with the industry in an interesting state of flux, competition getting hot, and buyouts at every turn this might be part of the fall out. Everyone chasing trends and a bit less diversity in offerings.

The Craft Beer Industry has been chasing trends for a long time but these days they seem to come faster and faster. Additionally, there is little to differentiate each beer when these trends take hold.

I admit that initially the trend was intriguing, I quickly turned against that feeling. These beers are just not all that interesting. Doubly true for the pineapple and watermelon IPAs; they make no sense to me.

The only thing worse than pineapple beers is watermelon beers. The only thing worse than watermelon beers is pumpkin beers.

The only thing worse than that is pumpkin beers in July. Look at this. Southern Tier advertises that Pumking is availble in JULY.

Happy Birthday

  Dogfish Head’s Birthday Beer to Help Celebrate BoB’s 1st Birthday

It was a year ago, a couple weeks after first purchasing the domain above, that I got my first post up on the site. The guiding principle I gave myself was “Beer does exist in a vacuum; don’t just write about what is in the glass.” That idea really came to life when I attended the Harrisburg Beer Week kick-off party and sipped on the (717) Collaboration Ale by Troegs, Pizza Boy and Appalachian Brewing Company. I wrote for that post what is still one of my favorites.

Too many beer reviews on the Interwebs talk about the beer in a way that focuses exclusively on what’s in the glass. That ignores a big part of what craft beer is to me.

Drinking beer should and can be more than an alcohol delivery device.  The expectation is that craft beer brings more to the imbiber than just booze. It has a back story, is an artistic endeavor, and has cultural or personal relevance that should be discussed. Some posts I wrote did this well; others maybe not so much. In the end I think most worked.

  • Other Writers: I have discussed with a couple people about posting on this blog from time-to-time. It would be a rarity but it should happen. Really hoping to have one guy join… He is a total lunatic but he really knows his beers. He would be completely insane, gonzo, and it could be so much fun.
  • Lagers and Pilsners: In 2016 I am going to planning to drink more Lagers and Pilsner beers. Hoping this will broaden my taste and hopefully you will find some good beers too.
  • More Regular Posts (LOL J/K I can’t promise that…)

Make Like a Tree and Get Out of Here…

Dogfish Head’s spruce infused pale ale, Pennsylvania Tuxedo, was a much sought after well regarded beer.  It was brewed in collaboration with Woolrich, an outdoor clothing company. The beer was brewed with fresh green spruce tips that were picked from Northern PA forests in the spring.  They give the beer a resin like flavor that is piney (obviously) and complements well with bitterness of the hops.  This is, without a doubt, a fantastic beer.

Dogfish Head likes to play with the notion that they are don’t do things the way everyone else is doing things; this is generally true. Putting thousands of handpicked little bits of new pine tree growth into a beer is certainly not the traditional way of brewing a pale ale.

If you like craft beer, and considering you are reading this blog I assume you do, chances are really good that you very much like this beer.  It is a damn fine pale ale. It is a little hard to find but definitely worth your efforts to try.

Is it “off-centered?”  Sure.

But is it daring?  I don’t think so.

Daring is putting an entire six-foot Douglas fir tree into your brew and hoping you do not end up kegging turpentine.

Theo Armstrong of ZerØday Brewing Co. did just that… put an entire six-foot Douglas fir tree into this beer.

When I saw that he was putting an entire six-foot tree into his brew I first assumed it was a joke. Then when it was clear that it was not a joke, I thought it was stupid and that it would never work.  I mean… You can’t just put the whole fucking tree in there.

Apparently, you can put the whole fucking tree in there and I am the stupid one. The end result was D.T.F. Sasion and it’s delicious.

Not everyone is going to love D.T.F. Saison. It is a piney, earthy, slightly sweet, semi-dry saison/farmhouse ale. D.T.F. is funky and has a strange nature that builds as you sip the medium bodied lightly carbonated brew. At first sip I thought “well I think I can taste the pine tree.” As the beer warmed up and throughout the drink the flavors stick and build on the palate like baseball pine tar upon a batting helmet over the course of the season. It’s slightly sticky and clear on opening day and by the end of the glass you have 162 games worth of rich, dark, earthy, aberrant flavors adhering to your mouth via a long finish.  I loved it.

This beer is daring because it is strange, unusual and riddled with risk.  I have not asked Theo, but if he says he KNEW the beer was going to turn out as well as it did, I wouldn’t believe it.  This beer easily could have turned into a disaster. In brewing, failure is not an infrequent occurrence.  Failed brews cause brewers to dump beers that just don’t turn out; even with beers that they have perfected over years of brewing. Sometimes, yeast just don’t eat. Temperatures get out of hand. Sometimes something goes wrong that is out of the brewer’s control.  Each ingredient, level of complexity, and step of the brewing process is an opportunity for failure.

Failing a brew at ZerØday would have been difficult. As far as I know they are working very hard to meet demand.  Theo is brewing all the time (while working his regular job).  To fail an entire batch at a brewery that is less than a year old would have been hard. If Dogfish Head’s Pennsylvania Tuxedo fails, they move on and no one outside can tell the difference.

Theo Armstrong put a six-foot pine tree in his beer and it turned out magnificently. Dogfish Head made a fine beer that in reflection to what ZerØday has done only is lacking in its audacity.  Being the little guy has its difficulties and advantages. Dogfish Head can’t put entire trees in their brews; they can’t really crank the dial to 11. ZerØday can and did.  D.T.F. Saison’s execution and flavors are outlandish and audacious; and it paid off in spades and you have to give it a try.

Celebrating 20 Years of Off Center Thinking and Brewing

Some people live a charmed life.  Sam Calagione always seemed like that kind of guy to me.  20 years ago this week Sam founded Dogfish Head Brewery in Milton, Delaware.  Over the past two decades the brewery has grown into a 175,000 barrel behemoth in craft beer, Sam has become a spokesperson for craft brewing, and few others have done more to move the industry forward.

Everyone knows Dogfish Head.

I have the pleasure of visiting Rehoboth about two to three times a year.  I have run the Dogfish Dash, and will again this year.  The brewery in Milton is a great place to visit and I always make a stop at the brewpub. The brewpub is where to check out what strange one offs and new brews are on tap. When it comes to Dogfish… If they brew it, I will buy it.

My favorite time to visit the brewpub is during the off season on Wednesdays.  Way-back Wednesday is when they tap an aged keg of beer (at least 2 years old) and offer some tasty bottles for sale out of their cellar.  In the early spring of 2009, I purchased two 2006 bottles of 120 Minute IPA, and then I promptly put them away for a special day.

120 Minute IPA is described as “the Holy Grail for hop heads.”  Though the “whale” status on 120 Minute IPA has diminished due to ever changing tastes and wider availability, this beer still delivers a phenomenal experience.  The two hour boil while continuously being hopped and the month long dry hopped aging process leaves you with a beer that is 15-20% ABV and a palate wrecking level of bitterness.

To celebrate 20 years of off center thinking and brewing I opened the nine year old bottle of 120 Minute IPA and poured it into a DFH IPA glass.  The aging process produces significant changes in this brew.  The hazy golden hue turns to a deep mahogany.  The hop oils disappear and leave behind a sweet strong brew.  The harsh astringency of alcohol is mellowed; still boozy but more inviting.  The nose is somewhat oddly of maple and cherries with a slight orange tone.  This full bodied beer comes across as downright heavy.  Sipping brings forth rich malts with cherry and brown sugar sweetness.  This beer is sweet but without a saccharin-like finish.  It’s a proper sweetness.  Light in carbonation, and long lasting in the finish, a 12 oz. bottle will last all evening or split perfectly between two.

I have yet to find a beer that is capable of such dramatic change via aging as this one. After resting for a number of years it can take on the depth and complexity of a top shelf after dinner cordial.  A fresh 120 and a well-aged one are only discernable as the same brew by the label on the bottle.  It is a magical transformation.

The general rule is “hoppy” beers must be consumed fresh to get all their dank, resin, citrus and pine like flavors at peak.  But this beer is the exception.  I much prefer it aged 5 or more years and I am very happy that I have many more sleeping quietly in the dark waiting for their day.

Dogfish Head and Sam Calagione are champions for an entire industry.  They make great beer.  Period.  But their 20 years of success are not based on a charmed existence or good luck.  Anyone that has watched Beer Wars or the short lived series Brew Masters knows that their success is based on hard work, an exacting demand for quality, and unrelenting desire to push the envelope.  I think it is clear that this brewery is aging just as well as their top flight beer. They both are just getting better with the years.

Strawberries and Beer: Together Again For the First Time

  Right now driving around Central PA the farm stands are all open and there is one piece of produce that is at peak: Strawberries.

Let us forget for a minute my last post about summer beer and their light and crisp flavor profile and instead focus on what pairs right with a fresh bowl of ripe red sweet and slightly tart strawberries.  In my opinion these tend to be malty, heavier beers that contrast the natural flavors of the berries.

My fist pick is ¿Impending Descent? by Troegs.  This gonzo Russian Imperial Stout gets released each November so I buy in bulk to enjoy it on occasion throughout the year and have been ageing a large number as a running vertical. If you have one tucked away, pairing it with some fresh local strawberries will work out perfectly.  The copious amount of malts (six varieties) provide for various flavors of dark chocolate, vanilla, and coffee.  The roasted malts work wonderfully with the sweet tart fruit. If this beer has been cellaring for a time the pine and resin hop notes will have muted and left a perfect pairing.  If you can’t get a hand on ¿Impending Descent? I suggest picking up the always available Javahead Stout or racing out to the Hershey brewer right quick and picking up a growler of Scratch #192 a velvety smooth and decadent chocolate stout.

Palo Santo Marron by Dogfish Head Brewing will pair nicely.  The caramel, vanilla, and wood flavors from this 12% ABV brown ale will marry wonderfully.  The roasted notes along with molasses and a round mouth feel just work.  This is a world class beer and would be right at home with a scoop of vanilla ice cream and some strawberries.

Samuel Smith Organic Strawberry Ale is a wonderfully crisp and tart fruit beer from the world famous English brewers.  Smooth malts with a soft mouth feel and subtle strawberry finish will be intensified by local fresh berries. This beer is easy drinking at 5% ABV. I would pair this with a strawberry and baby spinach salad with a light poppy dressing for dinner.

After dinner consider opening a bottle of Southern Tier’s Crème Brulee Imperial Milk Stout.  This beer is the pinnacle of Southern Tier’s very highly regarded Blackwater Series in my opinion.  Remarkably this beer tastes exactly like its name sake.  In fact, it is downright magical in likeness.  Cream, vanilla, and burnt sugar come straight through with a long sweet lasting finish.  This 9.6% ABV full bodied beer has an exceptional mouthfeel and would be a fine addition to a strawberry shortcake dessert.

Aprihop by Dogfish Head

Aprihop

A classic spring brew that I seek out ever year. With a newly deposited tax return and welcoming the vernal equinox I sprung for the rare move and purchased an entire case; I rarely buy a case of anything.

A very popular and widely available seasonal beer, it’s the fruit beer for people that don’t like fruit beer. It’s like a double IPA with a fruity nose and a balanced use of malts.

Opening the beer and pouring the rich amber libation into a glass releases the fragrance of apricots. It’s in abundance in the nose with some hint of the northwest hops which are heavily used.

A vigorous pour provides for a light tan to off white head that dissipates slowly and helps offer up a very pleasing nose. This beer smells great and is inviting.

The flavors are complex but not delicate. Hops are loaded up and offer a earthy grassiness. The apricots are here in a supporting role and they merge well by adding depth to the bitter hops and sweet malts. The fruit flavors are a faint tartness as the beer reaches room temperature and really opens up. The 7% ABV becomes evident then too. This is a big beer but not over powering. The finish is long and crisp with a bit of dryness.

The flavors are in balance and that makes it an exceptional beer. If you have not had Aprihop you should take the opportunity this year. You will find it on tap at bars with discerning selections or in 4 packs.

It gets the Bearcat Seal of Approval.
